How do I install new tile over old tile?

I have a bathroom that needs updating. There is carpet by the sink area, which obviously would have to be ripped out and tile placed there. In the actual bathroom, there is some older style tile. Do I have to rip out the old tile, and then put the new tile in, or can I just tile over the old stuff?
